ALOO JEERA

A very yummy and spicy side dish........

We love it having with paratha/phulka......

You can even have it as a starter....... 




INGREDIENTS:

1. Potatoes                          -     3 boiled.

2. Onion                              -     2 medium

3. Green chillies                  -     2

4. Garlic                               -     2

5. Jeera powder                    -     2 tbspn

6. coriander powder             -     1 tbspn

7. red chilli powder              -     2-3 tbspn

8. Salt                                   -     to taste

9. mustard seeds                   -     1 tspn

10. cumin seeds                    -     1 tspn

11. oil


PROCEDURE:

 

1. Chop the onions, green chillies and garlic ........



2. Heat a pan , add oil.

3. Once its hot, add mustard seeds and cumin seeds.



4. Once they splutter, add chopped onions and green chillies and some salt..


5. Now peel the skin of the boiled potatoes and cut them into cubes.



6. Once the onions turn transculent , add the masala powders ( jeera and coriander).


7. Now fry them for 3 mins.

8. Now add the boiled potato cubes and salt to it and fry for 3mins.


9. once they are fried well, add red chilli powder and toss them well.


10. Fry for 2 minutes.... and take it to a bowl



11. serve hot with rotis/phulkas/parathas.....

TANDOORI CHICKEN AT HOME

One of the fav dish for many Non-veg lovers.......
I tried it last sunday..... and i cooked it on a charcoal grill / boggula kumpati.
It tasted wonderful.......



INGREDIENTS:

chicken boneless/ with bones - 250 grams

Everest Tandoori chicken masala powder - 1 tbspn

curd - 1 tbspn

salt - to taste

red chilli powder - 1 tbspn

turmeric - a pinch.

oil - just to apply.(optional)



PROCEDURE:

1. Cut, clean and wash chicken well... add some turmeric while washing it. It droves the germs away , if any.

2. Now , take a bowl and add, curd, red chilli powder, salt, tandoori masala powder , food colour(optional) 



3.Mix all the ingredients well.


4. Now add the chicken pieces to this marinade and let it rest for minimun 30 mins. the longer you marinate, the better the taste.


5. Now, You can take a pan, add oil and shallow fry the pieces.

                             OR

   YOU can grill it in your oven.

                            OR
  YOU can use a traditional charcoal grill.

6. I used my charcoal grill as its the best way to have your tandoori chicken.


7. Just lit the coal, and put a grill on it.

8.Now put the marinated chicken pieces on the grill and fry for 2 -3 mins .



9. Fry well on both side. If you want, apply oil on the pieces.
But its really not required....



10. Take out from it and serve hot....



11.I served it with veg pulav..... and njoyed it ..



Even though the name is Tandoori chicken, we are not doing it in the oven or in the actual way. Kumpati is a traditional andhra stove. So cooking on it makes it an andhra dish too.... So

I like this item very much.I always fight vth my husband for this item.but he ll not allow me to eat it regularly bcoz its the reason for heat in our body.So i learnt how to prepare this n now im doing this at home.recently I did this n it turned out tasty.so here is the receipe..........

Items needed:
1.Chicken (boneless pieces) - 1/4 kg
2.Corn flour - 3 tspns
3.red chilli powder - 1tsp
4.ginger garlic paste - 1.5tsp
5.food color - a pinch
6.salt - to taste
7.Tasting salt/chinese salt/ajinomoto - a pinch(optional)
8.soya sauce - 1/2 tsp
9.white pepper powder - 1/4th tsp
10.ginger - 1"(finely chopped)
11.garlic(5-6) - finely chopped
12.green chilly - 3 (finely chopped)
13.onion - 1 (small)(finely chopped)

Procedure:

1.first you need to marinate chicken pieces.For that,put the chicken pieces in a bowl and add red chilli powder, ginger garlic paste, corn flour, salt,food colour.mix them well n let it marinate for about 30 mins.
2.put a pan n heat oil for deep fry.put the chicken pieces pieces in the oil n fry till the pieces cook.but dont fry for more time.that ll make the pieces hard.
3.now take out the pieces from oil n put them on a tissue so that excess oil goes out.
now take a pan n put 2 tspns of oil.
4.after the oil gets hot put onions, chilli,ginger,garlic,salt,red chillipowder n fry them till onions become transculate.
5.now add soya sauce, white pepper powder.Let it cook for 2 mins.
6.now add chicken pieces to it and add a spoon tomato ketchup n add some water.
7.mis it well for 2 mins.
8.Garnish with coriander and serve hot................
NOTE:for chicken manchuria wet add more soya sauce and water........
