ACHARI BAINGAN(NOT PUNJABI)


If you are getting bored with the regular Brinjal fry , then try this simple twist...... :)

My MOM used to do this , whenever i say " Eppudu idhe brinjal fryaaaaa???????? Naku vadhu.... "  ani :)


This is exactly the same recipe as a simple brinjal fry, but at the end, we will add some pickle(achar).


INGREDIENTS:

1. Brinjal            -    300 gms

2. Dry red chillies  -  2

3. mustard seeds    -  1 tspn

4. cumin seeds      -  1 tspn

5. curry leaves      -  4

6. Red chilli powder    -   2 tspn.

7. salt for taste

PROCEDURE:

1. Clean the brinjals... Was them well.



2. Cut into thin strips and put them in water.... otherwise brinjals turn their color


(THis is how a brinjla looks, if its fresh)


3. Take a pan and heat.... Once its hot  add oil.

4. Now add dry red chillies, garlic pods.


5. Add cumin and mustard seeds.



6. Add curry leaves once the seeds splutter.


7. Add turmeric powder .


8. Now add the brinjal pieces , add salt and mix them well.




9. Mix it at times.... may for 3 minutes intervals.


10. Once the brinjal is cooked, add red chilli powder


11. Fry for an other 2 minute.


 12. Now take some mango pickle(without pieces). The more spicy you want, the more pickle you add.




 13. Add this pickle to the fry.


 14. Mix it well and fry for 2 mins.



 15. Serve hot with rice.... njoy.....
