ALOO JEERA

ALOO JEERA

A very yummy and spicy side dish........

We love it having with paratha/phulka......

You can even have it as a starter....... 




INGREDIENTS:

1. Potatoes                          -     3 boiled.

2. Onion                              -     2 medium

3. Green chillies                  -     2

4. Garlic                               -     2

5. Jeera powder                    -     2 tbspn

6. coriander powder             -     1 tbspn

7. red chilli powder              -     2-3 tbspn

8. Salt                                   -     to taste

9. mustard seeds                   -     1 tspn

10. cumin seeds                    -     1 tspn

11. oil


PROCEDURE:

 

1. Chop the onions, green chillies and garlic ........



2. Heat a pan , add oil.

3. Once its hot, add mustard seeds and cumin seeds.



4. Once they splutter, add chopped onions and green chillies and some salt..


5. Now peel the skin of the boiled potatoes and cut them into cubes.



6. Once the onions turn transculent , add the masala powders ( jeera and coriander).


7. Now fry them for 3 mins.

8. Now add the boiled potato cubes and salt to it and fry for 3mins.


9. once they are fried well, add red chilli powder and toss them well.


10. Fry for 2 minutes.... and take it to a bowl



11. serve hot with rotis/phulkas/parathas.....

Spicy bagara baingan fry / Spicy Eggplant fry

Why to eat gravy type bagara baingan.... try this dry item .....
You will njoy .......


INGREDIENTS:

1. Fresh Brinjals - 500gms
2. Groundnuts - 2 tbspn
3. Sesame seeds / Nuvvulu - 2 tbspns
4.Senaga pappu / chana dal - 1 tbspn
5. Dry red chilis - 4
6. Garlic pods - 2
7. Cumin seeds - 1 tspn
8. Mustard seeds - 1 tspn

PROCEDURE:

1. Dry roast Dry red chillies , Ground nuts, sesame seeds and chana dal separetely.
2. Let them cool. Once they are cool, grind them into a course powder.



3.Cut the brinjals as shown and put them in water . (otherwise their color gets changed).





4. Heat a pan, add oil.
5. Once the oil is hot, add cumin seeds, mustard seeds and garlic pods.



6. Now add a pinch of turmeric powder , salt and add brinjals


7. Toss them well and cook them for about 10mins. or until brinjal gets cooked.


8. Now add  the ground powder and mix it well. (Toss them... Dont mix them hard ... Your brinjals may lose their shape)


 9. Fry them for about 2 to 3 mins .


10. Now serve hot with rice and sambar/rasam.

GHOBI FRY / CAULIFLOWER FRY

The easiest.....





INGREDIENTS:

1. Cailiflower / Ghobi - 1 medium
2. Dry red chillies - 2.
3. cumin seeds - 1 tspn
4. Mustard seeds - 1 tspn
5. Curry leaves - 3
6. Salt - to taste
7. Red chilli powder - 1 tspn.


PROCEDURE:

1. cut the florets and put them is warm salt water for 10mins.


2. This will make the worms float , if any.

3. Now heat oil in a pan.

4. Once its hot, add dry red chilllies, cumin and mustard seeds.

5.Once they splutter, add curry leaves, turmeric and cauliflower florets.


6. Mix them well, add salt , let it cook for 5 mins putting a lid on the pan.



7. Once the Ghobi is cooked, add red chilli powder and fry for an other minute.

8. Check for salt and serve hot with sambar/ rasam/ pappucharu.

ALU FRY / POTATO FRY

My Fav.... LappLappa.......


INGREDIENTS:

1. Potatoes - 4
2. Dry red chillies - 4
3. mustard seeds / Aavalu               - 1 tspn
4. Cumin seeds / Jeera / jeela karra -  2 tspn
5. garlic pods - 2
6. curry leaves - 5
7. salt - to taste
8. Red chilli powder - 1 tbspn
9. turmeric powder - a pinch

PROCEDURE:

1. Heat a pan , add oil.
2. Once its hot, add Dry red chillies, garlic, mustard and cumin seeds.
3. Once they splutter, add curry leaves and turmeric.


4. Now add the cut potato slices and salt.

5. Mix it well and let it fry without putting lid.


6. Once the potato is cooked ( just use a fork to test it) , add red chilli powder and mix it well.


7. Fry for 5 more minutes .... if u want it more crispy...


8. Now test the seasoning(salt) and adjust accordingly....


9. Serve with hot rice and tomato dal...... LapLappp ......

BHENDI FRY

A very simple fry....


INGREDIENTS:

1. Bhendi / Lady's finger / Bendakayalu  -   250 grams
2. Peanuts / palleelu   -  2 tbspns
3. Pachi senaga pappu/ chana dal  -  2 tspns
4. Salt to taste
5. Red chilli powder - 2 tspns.

INGREDIENTS FOR TEMPERING:
1. Dry red chillies -2
2. Garlic pods - 1
3. mustard seeds / aavalu- 1 tspn
4. cumin seeds / jeela karra - 1 tspn
5. turmeric powder - a pinch
6. curry leaves - 5

PROCEDURE:

1. Chop Lady's finger into small pieces.


2.  Heat a pan, add oil.
3. Add peanuts and fry for a minute.
4. Now add chana dal and fry for an other minute.
5. Now take out these into a plate and put aside.
6. Now in the same pan, add Dry red chillies, Garlic pods, mustard seeds, cumin seeds and fry for a second.

7. Now add a pinch of turmeric powder , curry leaves and add the chopped bhendi.


8. Mix well. Fry it till the bhendi gets cooked. DO NOT PUT LID.

9. Now add red chilli powder and fry for a minute.


10. Finally add peanuts and chana dal and serve....


ACHARI BAINGAN(NOT PUNJABI)


If you are getting bored with the regular Brinjal fry , then try this simple twist...... :)

My MOM used to do this , whenever i say " Eppudu idhe brinjal fryaaaaa???????? Naku vadhu.... "  ani :)


This is exactly the same recipe as a simple brinjal fry, but at the end, we will add some pickle(achar).


INGREDIENTS:

1. Brinjal            -    300 gms

2. Dry red chillies  -  2

3. mustard seeds    -  1 tspn

4. cumin seeds      -  1 tspn

5. curry leaves      -  4

6. Red chilli powder    -   2 tspn.

7. salt for taste

PROCEDURE:

1. Clean the brinjals... Was them well.



2. Cut into thin strips and put them in water.... otherwise brinjals turn their color


(THis is how a brinjla looks, if its fresh)


3. Take a pan and heat.... Once its hot  add oil.

4. Now add dry red chillies, garlic pods.


5. Add cumin and mustard seeds.



6. Add curry leaves once the seeds splutter.


7. Add turmeric powder .


8. Now add the brinjal pieces , add salt and mix them well.




9. Mix it at times.... may for 3 minutes intervals.


10. Once the brinjal is cooked, add red chilli powder


11. Fry for an other 2 minute.


 12. Now take some mango pickle(without pieces). The more spicy you want, the more pickle you add.




 13. Add this pickle to the fry.


 14. Mix it well and fry for 2 mins.



 15. Serve hot with rice.... njoy.....
